Tropical Fruit Flambe

This recipe is courtesy chef Anthony Danna, of Edgewood Downs Retirement Community.

Ingredients:

2 oz melted butter
¼ cup brown sugar
1 chopped mango
1 cup pineapple chopped
1 cup papaya chopped
3 chopped kiwi
2 bananas sliced
½ cup red raspberries
2 oz coconut rum (additional 151 for flaming)


Instructions:

Melt butter in pan, add brown sugar, melt together to make sauce
Add mango, then pineapple, then papaya until warmed
Add banana, kiwi and raspberries
Saute for 3 minutes
Serve with pineapple coconut ice cream (or your choice of ice cream)
