Yakuza: Sweet Miso Cod Recipe

Sweet Miso Cod
-4oz Fresh Black Cod (Skin Removed)
-1Tbl White Miso Paste
-1/4 cup Sweet Mirin (Rice Wine)
-1/4 cup Sake
-1/4 cup Dashi Stock*
-1tsp unsalted butter
-Scallion for garnish

Warm vegetable oil in a non stick pan to a medium high heat
Season cod with salt and fresh cracked black pepper
Cook for 2 minutes an each side (more if cod is a thicker cut)
Remove cod from pan and turn temperature down to medium heat
Add Dashi, Sake and Mirin all to pan (careful because the alcohol from sake may flame up but will quickly burn itself out)
Reduce your liquid by half
Turn heat off and whisk in miso
Once miso is incorporated whisk in butter and pour sauce over black cod
Garnish with thin sliced scallions

*Dashi Stock
Place a postcard size piece of Kombu (available at most well stocked asian food markets)
Bring to boil
As soon as water boils remove Kombu and turn off heat
Add a hand full of Bonito Flakes and let sit with heat off for 30 min, strain

Mizuna Salad with ginger vinagrette
- Baby Mizuna (can substitute baby arugula)
-a few pitted cherries
-one small daikon radish peeled and thinly sliced
For the dressing
-1tsp Sherry Vinegar
-2tsp honey
-1tsp finely grated ginger root
-1tsp orange oil(available at most well stocked grocery stores)
-Salt and pepper to taste

In a bowl whisk together honey and sherry vinegar until honey has dissolved
Whisk in ginger and orange oil
Add salt and pepper to taste
Pour over and toss with salad
