Poached Figs from Bastas Trattoria

Poached Figs from Bastas Trattoria - Three Ways

  • Begin with a dozen ripe figs.
  • Place the figs at the bottom of a large pan.
  • Pour 1/4 inch white wine into the pan. This will be about 1/2 - 3/4 cup white wine.
  • Begin heating on high, and then lower to a simmer.
  • Sprinkle 1/4 cup sugar over the figs.
  • Cover pan for 8-10 minutes or until figs are soft and the liquid is reduced, but not dry.
  • Add 1/2 shot of your favorite liqueur. You can use grappa, brandy, cognac, or rum.
  • Reduce in pan.

Once you have poached the figs, you can serve them in a variety of ways. Chef Marco of Bastas has three recommendations.

1. Serve poached figs over ice cream and drizzle with excess sauce from the pan. Sprinkle with powdered sugar.

2. Slice poached figs and serve in a thin tart shell. Drizzle with creme fraiche or anglaise sauce.

3. Slice poached figs and serve atop fresh bread with butter and prosciutto.
