Ingredients
- 1/2 jalapeno chile, stemmed, optional
- 1/4 small yellow or red onion
- 2 handfuls cilantro leaves, or to taste, rinsed & patted dry
- 1 14.5-oz can chopped tomatoes, preferably organic
- 1 canned chipotle pepper or sprinkle smoked paprika, optional
- Salt to taste
Instructions
- In the bowl of a food processor fitted with the metal blade, add the jalapeno, onion and cilantro and pulse just until diced.
- Add the tomatoes and chipotle or smoked paprika, pulsing until combined. Don't over-process the salsa.
- Place salsa in a bowl. Add salt to taste. Stir well.
