Chocolate Guinness Cake
Ingredients
1 12-oz. bottle Guinness Stout
1 1/2 sticks unsalted butter, melted
1 tbsp. vanilla extract
3 large eggs
3/4 cup sour cream
1 1/4 cups cocoa powder
2 1/2 cups sugar
2 cups all-purpose flour
1 1/2 tsp. baking soda
Directions
Preheat oven to 350F.
Butter 2-9" cake pans and line with parchment.
In a large mixing bowl, combine the Guinness, melted butter and vanilla. Beat in the eggs, one at a time. Mix in the sour cream.
In another large bowl, whisk together the cocoa, sugar, flour and baking soda.
Gradually mix the dry ingredients into the wet Guinness mixture until smooth.
Divide the batter evenly between the two prepared pans. Bake for 35-45 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool completely before removing from the pans.
Guinness Braised Beef Brisket
Ingredients
3lbs beef brisket
2 whole cloves
1 cup chopped onion
1 cup chopped carrot
1 cup chopped celery
1 cup Guinness stout
2 cups water
1/4 cup brown sugar
¼ cup tomato paste
1 tablespoon fresh chopped dill
12 oz beef stock
Salt and fresh ground pepper to taste
Directions
Begin by searing the brisket in a dry hot pan on all sides. Next, put all of the ingredients into a crock pot and cook on low for eight hours. Cut brisket across the grain and serve. Enjoy.
