
1 pound asparagus, ends removed
2 tablespoons extra virgin olive oil
Kosher salt
Freshly ground black pepper
Zest from 1 lemon
2 ounces shaved parmesan
1. Preheat oven to 400°F. In a large mixing bowl toss asparagus in olive oil and season with salt and pepper.
2. Place on to a parchment lined baking sheet tray. Roast the asparagus in the oven for 8 to 10 minutes or until the asparagus is cooked and lightly browned.
3. Sprinkle the lemon zest and parmesan over asparagus. Bake for 3 more minutes to melt the cheese.
