Sweet Apple Chicken Sausage with Basil, Almonds & Grapes

INGREDIENTS
1 12 oz package al fresco Sweet Apple Chicken Sausage, fully cooked, cut into 1/2" slices
1 tablespoon Olive oil, extra virgin
1/3 cup Fresh scallions, chopped
3 Apricots, dried, finely chopped
2 cups White rice,long grain, cooked (jasmine or basmati)
1/2 cup Chicken broth, light, fat free, reduced sodium
1/4 teaspoon Sage, ground
1 tablespoon Fresh chopped parsley
1 cup plain, nonfat Greek style yogurt
1/3 Cup Fresh Basil, chopped
1/4 tsp Salt
1 tsp Fresh ground black pepper
1/4 Cup Almonds, slivered
2/3 Cup Grapes, red European type varieties, fresh (seedless), quartered

INSTRUCTIONS
1.  In medium sauté pan, add oil and sauté onions for 3 - 5 minutes. Add the sausage slices and apricots, sauté for 5 minutes. Add rice, stock, simmer 1 minute, then add the sage, and parsley. Cook for another 2 - 3 minutes.
2. Add yogurt and basil, and heat thoroughly 1 - 2 minutes.
3. Season with salt and pepper. Fold in grapes. Place in large bowl or serving dish and top with almonds. Serve either warm or cold.

Note: If almonds need roasting, preheat the oven to 350 degrees. Spread the almonds in a pie plate and toast in the oven until golden brown, approx. 4 minutes then cool.
You may substitute a quick cook brown rice for added fiber in this recipe.
