NW DUCK HASH
SERVES 2

  • 6OZ.     SHREDDED DUCK CONFIT (LAST NIGHT'S DINNER)
  • 3OZ.     BACON (LIGHTLY COOKED & DICED)
  • 2TBS.    OLIVE OIL
  • ½EA      LEEK (SMALL DICED)
  • ½EA      YUKON GOLD POTATO (SMALL DICED)
  • ¼CUP    RED WINE (GOOD ENOUGH TO DRINK)
  • ¼CUP    DEMI GLACE (OR BROTH)
  • PINCH   FRESH THYME & ROSEMARY
  • PINCH   KOSHER SALT
  • A/N     EGGS

 

  • SAUTEE LEEKS WITH OLIVE OIL OVER MED-HIGH HEAT FOR ABOUT 45 SECONDS
  • ADD DICED POTATOES AND BACON, LET IT COOK FOR ABOUT 2 MINUTES
  • NEXT ADD THE DUCK CONFIT AND RED WINE, LET IT SIMMER UNTIL THE WINE IS REDUCED
  • ADD THE DEMI GLACE ALONG WITH A PINCH OF THYME AND ROSEMARY, COOK ABOUT TWO MORE MINUTES
  • LASTLY ADD A PINCH OF SALT TO TASTE AND SERVE WITH A FEW FRIED DUCK EGGS (IF YOU HAVE THEM)
