Green Eggs and Hash

Serves 10

  • 8oz. Cooked Bacon Chopped
  • 8oz. Cooked Ham Cubed
  • 8oz. Sausage Chopped
  • 12oz. Spam Chopped
  • 1ea. Onion Medium Diced
  • 1ea. Green Peppers Medium Diced
  • 3ea Garlic Clove Minced
  • 8oz Cheddar Cheese Diced
  • 3# Cooked Large Diced Potato
  • 8oz butter
  • 20 Large Eggs
  • 1c Green Onion Chopped
  • To Taste Salt
  • To Taste Pepper

 

  • 1.Heat Large cast iron skillet on Med-High heat
  • 2.Melt butter then add onions cook for 3-4 minute
  • 3.Add garlic and peppers cook for 2 minutes
  • 4.Then add all 4 meats cook 3 minutes then add potato cook for 3 more minutes
  • 5.While hash is cooking heat non stick sauté pan to med heat add eggs cook till done fold in green onion and adjust seasoning with S&P
  • 6.Place portion of hash on a plate top with green eggs
