PORTLAND, OR (KPTV) -
A new kind of food cart pod is coming to southeast Portland.
The owner of Potato Champion food cart is working with the owner of Urban Works Real Estate on the project. The plan is to open the pod by the end of October, with hours from 11 a.m. to 7 p.m. Many well-known food carts have already signed on, including Koi Fusion, Potato Champion, Big Ass Sandwiches and Whiffies Pies' new concept Pyro Pizza.
The pod may expand by extending hours to cater to the late-night crowds. Organizers are even looking into throwing a special event.
