PORTLAND, OR (KPTV) -
Whether you like eggs scrambled, hard boiled or over-easy, a number of local families in need will be able to get cracking thanks to a generous donation.
On Monday, Wilcox Farms donated 21,000 eggs to the Oregon Food Bank in Northeast Portland.
Food Bank Resource Manager Mike Moran said eggs are always in high demand because they're such a great source of protein.
"We distribute eggs year-round," said Moran. We get a lot of eggs through our grocer recovery program and other donors ... but there's so much need for eggs in the system we'll buy 240-300 cases of eggs a week."
Moran said he hopes that along with eating the eggs, local children will enjoy coloring them for the Easter holiday.
