New Happy Valley food cart park will be biggest in Oregon

A new food cart park is set to open later this month, and it will be the biggest in Oregon.

Happy Valley Station will have its grand opening on October 30.

Valerie Hunter, an organizer of the new park, said what will set this pod of food carts apart is the 4,000 square-foot pavilion the carts will horseshoe around. A massive awning will keep customers dry when it rains, and the inside can be heated when it’s cold.

There will be 26 unique carts will be serving hungry customers when it opens, Hunter explained.

"One of the most amazing things about this pod, it is one of each type of food,” she said. “So as you go around the horseshoe pavilion, you're looking at one of each type."

In addition to the variety of cuisines, the park plans to have food that can be eaten for breakfast, lunch and dinner.

They plan to open on Southeast Sunnyside in Happy Valley October 30.
