Gratuity free: Portland's Le Pigeon restaurant to eliminate tipping

One of Portland's most well-known restaurants is set to put an end to gratuity.

Le Pigeon on East Burnside will eliminate tipping beginning June 18.

Co-owners Gabriel Rucker and Andy Fortgang said they have been discussing this plan since last fall when New York restaurateur Danny Meyer announced that all the restaurants in the Union Square Hospitality Group would be eliminating tipping.

Prices will increase at Le Pigeon, according to a release from the restaurant, "but only to compensate for the absence of gratuity. The final cost of eating at Le Pigeon will remain the same."

No tips will be accepted and credit card slips will not have a tip line starting in June.

The restaurant's owners said the benefits include higher wages for cooks and dishwashers, as well as more consistent income for servers with their hourly wages increasing significantly.

Le Pigeon's owners said the plan was announced to service staff over the past week and it has been "welcomed warmly."

“While this will represent a change for Le Pigeon’s guests, we are confident that our guests will likewise find this arrangement beneficial,” says co-owner Andy Fortgang. “We are confident as well in the service team, made up of experienced professionals that love what they do and take service very, very seriously.”

Rather than relying on tipping to determine a diner's satisfaction, Le Pigeon will now institute a way to leave feedback online. That platform is also expected to launch in June.

Fortgang and Rucker said they hope to lead the charge to eliminate tipping at more restaurants in Portland.
