Soup company makes the switch to cold foods on hot days

On a sunny day like Portland saw Friday, it’s tough to think about eating, or drinking anything that’s hot.  That's why local restaurants who specialize in those hot items are now figuring out ways to keep customers coming in.

Anyone that has been to Fresh Thyme Soup Company in Beaverton on a rainy day knows the place is normally packed.  Now that it’s so hot outside, that constant rush of customers is slowly fading.

To drum up business, the company said they’re adding cold soups, drinks and foods to their menu. It's something they wouldn’t normally do in Spring, but staff says since May is looking more and more like summer every year, they’re busting out their cold treats now.

"We have gazpacho, and we'll make fresh pear soup, and a watermelon soup," owner Randy Richards said. "Those will run through summer, and the customers love it. They are already asking for it, so we gotta get into gear and make some."

Staff says their traditional hot soups will still always be at the ready, for those rainy days when they come back around.
