Kangaroo in the Flinders Ranges, South Australia

(Meredith) -- A school cook in Nebraska added a secret ingredient to the chili last week -- kangaroo meat.

It happened at Potter-Dix Public Schools in western Nebraska and their superintendent Mike Williams, said he didn't find out about it until afterward. The cook, Kevin Frei, said he added the kangaroo meat to the beef because it's lean and healthy.

Williams said in a letter to parents, "I apologize for the anxiety and any harm that this has caused individual students and/or families." He added that the meat would have been approved the USDA, and he doesn't think it was unhealthy or dangerous, but it was "without a doubt not a normal staple of our diet."

"We will no way be serving food of this nature again," he said. It's unclear how Frei obtained the kangaroo meat.
